Shepard's Pie

5 Yams

1-2 # Ground Turkey

Onion

2 Carrots

Frozen Peas

Frozen Corn

Worcestershire sauce


1.Boil yams in covered pot until totally soft.

2.Heat deep skillet medium high heat with some EVOO

3.Brown turkey - 5 min, add S/P

4.Push turkey to side of pan, add onions and carrots to center – 5 min

5.Lower heat to medium.

6.Mix all together. Add worcestershire, poultry seasoning, salt pepper

7.Cover pan with foil tent, lightly. – 6-7 minutes (don’t skip this! And don’t use a regular lid.)

8.Stir in peas, corn, scrape brown bits from bottom of pan.

9.Scrape turkey mix into a 13 X 9

10.Broiler to high

11.Take off yam peels. Mash and salt. (That’s it!)

12.Spread yams on top of turkey

13.Paprika top of yams

14.Broil until a little hard on top – 5 min?? Your preference.
